Quiche cu ceapa

Pentru aluat: 230 g faina, 120 g de unt, un ou, sare.
Pentru umplutura: 500 g  ceapa, trei oua, boia de ardei iute, 1/2 l lapte, 70 g parmezan ras, ulei de masline extra virgin, sare.
Facem o movilita de faina pe suprafata de lucru, cu o scobitura in mijloc, in care punem untul taiat bucatele, un praf de sare si un galbenus de ou. Framantam aluatul cu mainile, adaugand o jumatate de pahar de apa calda, formam o minge din aluat, acoperim cu o carpa si lasam la dospit circa o jumatate de ora intr-un loc rece sau la  frigider. Taiem ceapa in rondele subtiri si le punem intr-o tigaie cu putin ulei, acoperim si calim usor la foc mic. Daca e necesar, adaugam putina apa fierbinte. Cand cepele s-au inmuiat, adaugam putina sare si boia de ardei iute, apoi lasam sa se raceasca. Intindem aluatul si-l asezam intr-o tava unsa cu grasime (sau folosim hartie pentru copt). Punem cepele deasupra. Batem ouale impreuna cu laptele, branza rasa si un praf de sare, turnam compozitia peste cepe. Introducem preparatul la cuptor, la o temperatura de 220 grade Celsius. Se coace aproximativ o jumatate de ora. Este foarte, foarte bun!
